Spiny Lobster In Peanut Sauce

INGREDIENTS

12 Medium Spiny Lobster Tails

1 Tablespoon Mixed Spice Masala

Salt to taste

3 Clove Garlic (Crushed)

1 Teaspoon Pepper Sauce

2 Tablespoon Peanut Butter

1 Tablespoon Olive Oil (Optional)

DIRECTIONS

  1. Place lobster in a bowl
  2. Add Mixed Spice Masala and season well
  3. Heat Sauce Pan
  4. Add Olive Oil
  5. Add Crushed Garlic
  6. Add Lobster Tails and sauté for about 3 minutes (stir occasionally)
  7. Add Peanut Butter, Pepper Sauce and Salt to taste
  8. Sauté another 3 minutes
  9. Remove from heat and serve

SAFFRON RICE WITH LARGE BUTTER BEANS

INGREDIENTS

1 CUP BASMATI RICE

1 CAN LARGE BUTTER BEANS

1 TEASPOON BUTTER (OPTIONAL)

SALT TO TASTE

PINCH SAFFRON (SOAK IN 1/4 CUP WARM WATER – 1 HOUR)

DIRECTIONS

Using Rice Cooker or Boiling Pot

– Prepare Rice as directed on packet

– Add Butter Beans, Butter

– Add Saffron Mixtures, Salt to taste and cook
