Fruity Chicken Stew

One of the oldest method of cooking. Stews have been around for ages. A stew is a perfect way to make use of bits and pieces of meats and vegetables in the fridge, a means of getting creative with what you’ve got. This easy to prepare Fruity Chicken Stew is a hearty and delicious meal on it’s own or served with rice.

Fruity Chicken Stew

INGREDIENTS:

2 MEDIUM BONELESS, SKINLESS CHICKEN THIGH (Diced) -SEASON WITH 1 TABLESPOON GROUND CHILLI PASTE AND SALT TO TASTE

(Marinate 30 minutes)

2 CUPS SWEET PEAS

1 MEDIUM CARROT (Diced)

1 LARGE GREEN PEAR (FIRM, Peel and Dice)

1 CUP BLENDED PINEAPPLE JUICE

SALT TO TASTE

1 TABLESPOON OLIVE OIL

DIRECTIONS:

Heat Olive Oil in Sauce Pan

Add Chicken and Carrot (Sauté stirring occasionally)

*When Chicken is cooked

Add remaining ingredients

Cook 5 minutes and serve
