INGREDIENTS

2 CUPS IRISH POTATO (Cooked / Diced)

1 CUP SWEET POTATO (Cooked / Diced)

1 TEASPOON ALL PURPOSE SEASONING

1 TABLESPOON EXTRA VIRGIN OLIVE OIL

2 CUPS RED PEAS IN BRINE (Drained)

1 MEDIUM AVOCADO (Diced)

Salt and Pepper to taste

TORTILLA (Fold and bake on greased pan 3-5 minutes) – Set aside

Combine all ingredients and serve with baked tortilla

To add baked chicken

Boneless Chicken Breast (Diced) seasoned with all spice and bake 20 minutes
