The versatility of Pumpkin. The classic Cream Of Pumpkin is always a favorite however, taste buds calls for a twist. How about freshly squeezed coconut milk and some crab flakes this creamy soup can be portioned as a starter or a hearty one pot meal. My motto JUST TWEAK WHERE NECESSARY. So here it is tweaked to perfection I’ve named it Creamy Crabby Cream Of Pumpkin. Let’s get cooking
INGREDIENTS
1/2 POUND PUMPKIN (BOILED)
1/2 CUP IMMITATION CRAB FLAKES
2 CUPS FRESHLY SQUEEZED COCONUT MILK (Preferably)
1/2 CUP VEGETABLE STOCK
1 TABLESPOON BUTTER
1 TEASPOON GARLIC SALT
SALT TO TASTE
1 TEASPOON OYSTER SAUCE
1 SMALL ONION (DICED)
1 TEASPOON GREEN ONION AND THIN SLICED RED BELL PEPPER ( GARNISH)
DIRECTIONS
BLENDER
Add Boiled Pumpkin and Coconut Milk (Puree / Blend well) Set aside
SAUCE PAN
In Sauce Pan on medium heat
Add Butter, Garlic Salt, Onion, Imitation Crab Flakes, Oyster Sauce (SAUTE – About 1 minute)
Add blended ingredients
Add Vegetable Stock
Salt to taste
Let this simmer (stir Occasionally) Cook 5-10 minutes or when desire thickness is achieved
Plate and garnish. Enjoy
