INGREDIENTS
1 Medium Chicken Breast (Cut in bite size pieces)
1 Firm Mango (Cut in bite size pieces)
1 Medium Tomato (Chopped)
1/2 Cup Water
2 oz. Ginger
3 Tablespoons Olive Oil
1 Tbsp. Vinegar
1/4 Tsp. Chilli Paste
2 Tbsp. Brown Sugar
1 Tbsp. Cornstarch
1/4 Tsp. Black Pepper
1/2 Tsp. Onion Powder
1 Tbsp. Finely chopped leek
Salt to taste
DIRECTIONS
Season chicken with Black Pepper, Onion Powder, Salt, Cornstarch
In saucepan on medium to high heat add olive oil, brown chicken and set aside

Blend ginger and water

Pour blended ginger in medium sauce pan on medium heat

Add Chilli Paste, Brown Sugar, Vinegar and Mango -cook until liquid caramelize, then turn off heat

Add Tomato, Leek and Chicken stir and serve
