Macadamia Nut Brittle Loaf

The inspiration for this scrumptious Macadamia Nut Brittle Loaf was a last minute request for something sweet. 10-15 minutes and voilà dessert is served.

1 Cup Haagen-Dazs Macadamia Nut Brittle Ice Cream

1 Cup Aunt Jemima Original Pancake Mix

1/4 Cup Milk

1/2 Tsp. Vanilla

1/4 Tsp. Hershey’s 100% Cacao (Garnish)

Maraschino Cherries (Garnish)

1 Tsp. Butter (Grease loaf pan)


  1. In mixing bowl

  2. Combine Haagen-Dazs Macadamia Nut Brittle Ice Cream, Pancake Mix, Milk, Vanilla. Blend using electric mixer , spatula or wooden spoon until smooth batter is achieved.

  3. Grease 9×5 Pyrex Loaf Pan with butter

  4. Pour batter into loaf pan

  5. Microwave at 2 minute intervals until done (should take 5-7 minutes)
