Egg Fried Rice with Radish and Cilantro

This easy and delicious one pot meal of Egg Fried Rice with Radish Cilantro is so fragrant and yum. Easily a family favorite

INGREDIENTS

4 EGGS (BEATEN)
2 TBSP. EXTRA VIRGIN OLIVE OIL (2 PARTS)
1 SMALL BELL PEPPER (JULIENNE)
1 CUP RADISH (THIN SLICES)
1 SMALL TOMATO (DICED)
1 STALK SPRING ONION (FINELY CHOPPED (2 PARTS)
3 CUPS COOKED BASMATI
1 CUP CILANTRO (CHOPPED)
SALT AND PEPPER TO TASTE

DIRECTIONS

  1. In Large skillet on medium -high heat add Olive Oil (1 Tbsp)

  2. Add Bell Pepper, Radish, Tomato, Spring Onion and stir

  3. Pull veggies aside and add Eggs

  4. Continue stirring, when egg becomes solid incorporate veggies and stir

  5. Add Salt and Pepper to taste

  6. Add Basmati Rice

  7. Add Olive Oil, Spring Onion and Cilantro

  8. Stir and remove from flame
