Peanut Butter Chocolate Bread Pudding

INGREDIENTS

3 TOASTED PEANUT BUTTER SANDWICHES

1 TABLESPOON BREAD CRUMBS

2 TABLESPOONS COCOA POWDER

1 TABLESPOON BROWN SUGAR

2 EGG (Separate yolk and whites)

1/2 CUP LOW FAT MILK

1 TEASPOON CINNAMON

1 TEASPOON VANILLA

1/2 TEASPOON BAKING POWDER

SALT TO TASTE

DIRECTIONS

Make chocolate batter

  1. Smother Peanut Butter on toast

  2. Cut butter toast in small squares

  3. Combine cocoa powder, brown sugar, cinnamon, vanilla, egg yolk, bread crumb, milk

Make merengue

  1. Use electric Mixer to whisk egg whites

  2. Add baking powder, whisk until fluffy and peaked

Fold merengue into chocolate batter

Place peanut butter squares in casserole dish

Pour chocolate and merengue mix on peanut butter squares

Bake 20-25 minutes @ 60 degrees (F)
