Baked Cherry Cheesecake

Hobnob Oats Biscuit Crust (Ingredients)

200g Hobnob Oats Biscuits (Crushed)

100g Butter (Melt)

2 Tablespoons Brown Sugar

Combine all ingredients, mold in pie dish

Cherry Pie Filling

Cherry Pie Filling

226g Cream Cheese

1/2 Cup Flour

4 Tablespoons Heavy Cream

2 Eggs

1 Tablespoon Lemon Juice

1 Tablespoon Cherry Syrup

2 Tablespoons Brown Sugar

1 Teaspoon Vanilla

1/2 Teaspoon Cinnamon

Salt to taste

  1. Combine all ingredients in mixing bowl, use electric mixer to achieve a smooth consistency

  2. Pour unto Hobnob Pie Crust

  3. Bake 25-30 minutes 300 degrees F

  4. Remove from oven, top with Caramelized Cherries, cool and refrigerate

Caramelized Cherries (Topping)

6 Sweet Cherries (Slice in halves and remove seed)

1 1/2 Tablespoon Brown Sugar

1/4 Cup Water

1 Tablespoon Dark Rum

In sauce pan on low heat add water and sugar (bring to a boil), cherries and rum. Remove from heat when liquid has thickened or caramelized.

Pour over cheesecake and serve
