Sweet Potato Puree

Sweet Potato Puree


2 Cups Water

8 Ounces Sweet Potato (Peeled and cut in bite size pieces)

1 Sprig Rosemary

1 Clove Garlic (crushed)

Salt To Taste

1 Tablespoon Butter

1/2 Cup Heavy Cream


In pot on medium heat bring water to a boil

Add Sweet Potato, Rosemary, Garlic, Salt (Cook s/potato until tender)

Remove Sweet Potato and strain the liquid


Transfer Sweet Potato and strained Liquid to blender

Add Butter and Heavy Cream

Puree and garnished with rosemary

Serve warm or cold
