Pickled Bell Peppers


2 Cups Vinegar

1/2 Cup Spring Water

1 Tablespoon Sugar

1 Teaspoon Salt

1 Tablespoon Pimento Seed

3 Hot Pepper

8 Mini Sweet Bell Peppers (Assorted colors)


  1. On medium heat, combine water, vinegar, salt and sugar (bring to a boil

  2. Wash bell peppers and remove seed as shown in photo

  3. Wash and make incisions in hot peppers

  4. Stack peppers in sterilized jar, add pimento seeds

  5. Pour brine over stacked peppers

  6. Set aside to cool, then refrigerate
