In the previous post I made Oven Baked Mahi Mahi which was absolutely divine. Here’s what I did with the leftover pieces, and this can be done with most fish but just be sure to get rid of the bones.
INGREDIENTS
3 Medium Mahi Mahi Steaks (deboned and flaked- about 2 Cups)
2 Tablespoons Cream Cheese
4 Ounces Sharp Cheddar (Shredded)
1 Large Bell Peppers (Diced – about 1 cup)
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Cumin
1/4 Teaspoon Onion Powder
5 Old El Paso Taco Boat (Soft)

Combine all Ingredients (except Taco Boats) mix well place even but generous portions in Taco Boats

Place on lined casserole dish and bake 15-20 minutes

Serve with thin slices of Avocado and garnish with basil or parsley
