Mahi Mahi Taco Boat

In the previous post I made Oven Baked Mahi Mahi which was absolutely divine. Here’s what I did with the leftover pieces, and this can be done with most fish but just be sure to get rid of the bones.

INGREDIENTS

3 Medium Mahi Mahi Steaks (deboned and flaked- about 2 Cups)

2 Tablespoons Cream Cheese

4 Ounces Sharp Cheddar (Shredded)

1 Large Bell Peppers (Diced – about 1 cup)

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Cumin

1/4 Teaspoon Onion Powder

5 Old El Paso Taco Boat (Soft)

  1. Combine all Ingredients (except Taco Boats) mix well place even but generous portions in Taco Boats

  2. Place on lined casserole dish and bake 15-20 minutes

  3. Serve with thin slices of Avocado and garnish with basil or parsley
