Red Onion Rice Salad


1 large Red Onion (sliced)
1/2 Small Yellow Bell Pepper (finely chopped)
1 Medium Carrot (cut in thin strips)
3 Leaves French Thyme
1 Cup Vegetable Stock (unsalted)
1 Tablespoon Butter
1/2 Cup Basmati Rice
Salt to taste


Put rice in the rice cooker followed by the other ingredients

Optional: When done add 1 tsp Olive Oil and !/2 tsp Cilantro
